Chutney of Cocagne figs by Christophe and Karen


This morning, we did a trial version of our very own fig chutney. We didn’t want to make a large amount yet, for we had to make sure the result was good. Well, it is more than good. This chutney is absolutely delicious! So we’ll make more of it soon (since we have about 3 kg of ripe figs). But here’s the recipe for you, in case you have figs and want to try this.

Chutney de figues de Cocagne à la Christophe & Karen

Ingredients:
80 ml apple cider vinegar
45 g sugar (we used Sucanat)
1 shallot
90 g apple (we used Canada)
60 g raisins
300 g fresh, ripe figs
7 g fresh ginger
1 tsp mustard seeds
1 cinnamon stick
3 cloves
1/8 tsp salt
1/8 tsp nutmeg
pinch of cayenne

Preparation:
Put all the ingredients in a saucepan. Bring to a boil and simmer for an hour and 15 minutes, while stirring frequently. Voilà!
